Although it may seem an uncomfortable partnership, military events including war, conquest, and life at military posts often include vegetable gardening or the desperate results from the lack of vegetables.  Records from North Dakota’s earliest army posts raise the issue of the value of fresh vegetables in relation to the soldiers’ health.  Unhealthy soldiers don’t serve well, and at a distance of several hundred miles from the territorial capitol at Yankton, dead soldiers were hard to replace.
